Ingredients

  • Steak (sirloin or ribeye)
  • Farro
  • Assorted vegetables (zucchini, bell peppers, sweet potatoes)
  • Olive oil
  • Garlic
  • Fresh herbs (parsley or basil)
  • Lemon juice
  • Salt
  • Pepper

Instructions

  1. Prepare the Farro: Rinse the farro under cold water, boil 4 cups of water with salt, stir in farro, reduce heat and simmer for about 30 minutes. Drain and set aside.
  2. Marinate the Steak: Mix olive oil, minced garlic, salt, pepper, and herbs. Coat steak in marinade and let it sit for at least 15 minutes.
  3. Roast the Vegetables: Preheat oven to 425°F (220°C). Chop vegetables, toss with olive oil, salt, pepper, and herbs, spread on a baking sheet, and roast for 25-30 minutes, turning halfway.
  4. Cook the Steak: Heat grill pan over medium-high heat, place marinated steak in the pan, and cook for 4-5 minutes per side for medium-rare. Let it rest for five minutes before slicing.
  5. Assemble the Bowl: Start with a base of farro, top with sliced steak, and add roasted vegetables. Finish with lemon juice and fresh herbs.
