  • 1 Packet Taco Seasoning
  • 2 Sweet Potatoes, Diced
  • 1 tbsp Olive Oil
  • 1 Can Corn, Drained
  • 1 tsp Tajin Seasoning
  • 1 Avocado, Sliced
  • Salt and Pepper to Taste
  • Chopped Cilantro (Optional) for Garnish

Instructions

  1. Prep Your Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper, then spread on an oven-safe tray. Roast for 25–30 minutes.
  2. Cook the Ground Beef: Heat a skillet over medium-high heat. Add ground beef and cook until browned, about 5–7 minutes. Drain excess fat if necessary.
  3. Add the Taco Seasoning: Sprinkle taco seasoning over beef, stir well, and cook for a few more minutes.
  4. Mix in the Corn: Add drained corn and Tajin seasoning to the beef mixture and stir until heated through, about 2–3 minutes.
  5. Check Your Sweet Potatoes: Ensure sweet potatoes are tender and golden.
  6. Assemble Your Bowls: Layer roasted sweet potatoes, followed by the corn-beef mixture, and top with sliced avocado and cilantro.
