Tilapia in Roasted Pepper Sauce

A delightful dish featuring tilapia fillets cooked in a savory roasted pepper sauce, perfect for a comforting meal.

  • 4 tilapia fillets (about 6 ounces each)
  • 2 red bell peppers, roasted and peeled
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup vegetable or chicken broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Roast the peppers: Preheat your oven to 450°F (232°C). Slice the red bell peppers in half, remove the seeds, and place them skin-side up on a baking sheet lined with parchment paper. Drizzle with olive oil, sprinkle some salt, and roast for about 25 minutes or until the skins are blistered and charred. Let them cool before peeling off the skins.
  2. Sauté the aromatics: In a large skillet, heat the tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and stir for an additional minute until fragrant.
  3. Make the sauce: Once the peppers are cool enough to handle, peel off the skins and chop or blend them until smooth. Add the roasted peppers to the skillet, pour in the broth and balsamic vinegar. Stir in smoked paprika, dried oregano, salt, and pepper. Let simmer for about 10 minutes.
  4. Cook the tilapia: In a separate non-stick pan, heat a dash of olive oil over medium-high heat. Season the tilapia fillets with salt and pepper. Cook each fillet for about 3-4 minutes on each side until golden brown and cooked through.
  5. Combine and serve: Gently place each fillet into the skillet with the roasted pepper sauce. Spoon some sauce over the top and let them bask in the flavors for a minute before serving.

Notes

Serve with a side of rice, quinoa, or crusty bread. This dish can be made in advance and reheated.
