Tortellini Pasta Salad

A vibrant and flavorful tortellini pasta salad perfect for any occasion, featuring tender tortellini, fresh veggies, and zesty Italian dressing.

  • 1 package of cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup bell peppers, diced (any color)
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the tortellini by bringing a large pot of salted water to boil, adding the tortellini, and cooking according to package instructions (2-4 minutes for fresh).
  2. Prepare the vegetables by chopping the cherry tomatoes, cucumbers, bell peppers, and red onion evenly.
  3. Drain and rinse the tortellini under cold water to stop cooking and cool them down.
  4. Combine the cooked tortellini, cherry tomatoes, cucumbers, black olives, bell peppers, and red onions in a large bowl.
  5. Pour the Italian dressing over the salad and gently mix until well-combined.
  6. Season to taste with salt and pepper and optionally add a squeeze of fresh lemon juice or herbs.
  7. Chill the salad in the fridge for about 30 minutes before serving for best flavor.

Notes

This salad can be made in advance and actually tastes better after sitting in the fridge.
