Vietnamese Summer Rolls with Chicken

Fresh and vibrant Vietnamese summer rolls filled with shredded chicken, fresh vegetables, and herbs, perfect for a light meal or gathering.

Ingredients

  • Rice paper wrappers
  • Cooked chicken breast, shredded
  • Rice vermicelli noodles, cooked
  • Lettuce leaves (e.g., romaine or green leaf)
  • Fresh herbs (mint, cilantro, or basil)
  • Carrots, julienned
  • Cucumber, julienned
  • Peanut sauce or hoisin sauce for dipping

Instructions

  1. Prepare your workspace by clearing a large cutting board or countertop and keeping a bowl of warm water handy.
  2. Soak one rice paper wrapper in the warm water for 10-15 seconds until pliable.
  3. Add about 2 tablespoons of rice vermicelli noodles in the middle of the soaked rice paper, followed by shredded chicken, julienned carrots, cucumber strips, lettuce leaves, and fresh herbs.
  4. Roll the rice paper by folding the bottom edge over the fillings, tucking in the sides, and rolling tightly.
  5. Repeat the process with the remaining ingredients, placing rolled summer rolls seam side down on a platter.
  6. Serve with a small bowl of your preferred dipping sauce.

Feel free to experiment with different fillings and dipping sauces; these rolls are very versatile!
