White Chicken Chili

  • 2 cans cannellini or great northern beans, rinsed and drained
  • 1 cup green chiles, fresh or canned
  • 1 medium yellow onion, chopped
  • 2 teaspoons cumin
  • 4 cups chicken broth
  • Olive oil for sautéing
  • Salt to taste

Instructions

  1. Prep the chicken: Start by cutting your chicken into bite-sized pieces.
  2. Sauté the onions: Heat a large pot over medium heat, add olive oil, and toss in your chopped onion. Sauté until soft and translucent, about 5-7 minutes.
  3. Add the chicken: Sprinkle in chicken pieces with a pinch of salt and cook until golden brown on the outside, about 6-8 minutes.
  4. Toss in the spices: Sprinkle in cumin and other spices you love. Stir well for about a minute until fragrant.
  5. Stir in the beans and chiles: Add drained white beans and green chiles to the pot. Mix well and let cook for another 2-3 minutes.
  6. Pour in the broth: Add in chicken broth and bring everything to a gentle simmer.
  7. Simmer and enjoy: Let your chili simmer for 20-30 minutes, stirring occasionally.
