Mom’s Famous Cream Puffs

Delightful, airy pastries filled with silky vanilla cream, bringing a sprinkle of joy and nostalgia to any occasion.

  • 1 cup water
  • 1/2 cup unsalted butter (1 stick)
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups cold whole milk
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)
  • Melted chocolate drizzle (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the water, butter, and salt in a medium saucepan; bring to a gentle boil over medium heat.
  3. Remove from heat and stir in the flour until a ball forms.
  4. Cool the dough for about 5 minutes, then beat in the eggs one at a time until smooth.
  5. Line a baking sheet with parchment paper and pipe small mounds of dough.
  6. Bake for 20-25 minutes until golden brown.
  7. Cool completely on a wire rack.
  8. Whisk together the cold milk and pudding mix until smooth; let sit to thicken.
  9. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  10. Fold the whipped cream into the pudding mixture until just combined.
  11. Slice each cooled cream puff in half and fill with vanilla cream.
  12. Dust with powdered sugar and drizzle with melted chocolate if desired.

Notes

You can prepare the cream puff shells ahead of time; fill them just before serving for the best texture.
