  • 1/2 cup unsweetened shredded coconut

  • 1 cup zucchini (grated and wrung out)
  • 2 cups carrots (grated)
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 3 large eggs
  • 1/2 cup avocado oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it with avocado oil or lining it with muffin liners.
  3. Mix together the flour, sugar, cinnamon, baking soda, and salt in a large mixing bowl.
  4. Combine the eggs, maple syrup, applesauce, and vanilla extract in a separate bowl, then whisk in the avocado oil.
  5. Grate zucchini and carrots, ensuring to squeeze out excess moisture.
  6. Fold the grated veggies, walnuts, and shredded coconut into the dry ingredients followed by the wet mixture.
  7. Spoon the batter into muffin cups, filling them about 3/4 full.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool the muffins in the pan for a few minutes before transferring them to a wire rack.

Notes

These muffins are versatile; you can add chocolate chips or dried cranberries, use flaxseed meal for a vegan option, or replace the all-purpose flour with a gluten-free blend.
