Delightful Fruit Pizza

A buttery cookie-like crust topped with creamy vanilla frosting and a colorful array of fresh fruits, perfect for summer gatherings.

  • 1 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 teaspoons baking powder
  • 3 cups all-purpose flour
  • 3.9 oz instant vanilla pudding (1 box)
  • 1 1/2 cups cold milk
  • 3/4 teaspoon almond extract (for frosting)
  • 1 cup heavy whipping cream
  • Fresh fruits (berries, peaches, kiwis, bananas)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg, vanilla, and almond extracts, mixing until combined.
  4. Mix the flour and baking powder in a separate bowl, then add to the butter mixture.
  5. Fold in the instant pudding mix until the dough thickens.
  6. Spread the dough onto the baking sheet, shaping into a circle or rectangle, and bake for 12-15 minutes until edges are golden.
  7. Cool completely before frosting.
  8. Beat heavy cream, cold milk, pudding mix, and almond extract until stiff peaks form.
  9. Spread frosting over the cooled crust.
  10. Arrange fresh fruits on top in a colorful pattern.
  11. Chill in the fridge for at least 30 minutes before slicing.
