Ghost Cheesecake Bars

Delicious and festive Ghost Cheesecake Bars perfect for Halloween gatherings, featuring a creamy cheesecake filling and ghostly whipped cream topping.

  • 1½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 2 cups whipped cream
  • Mini chocolate chips, for decorating

Instructions

  1. Preheat your oven to 325°F (165°C). Grease a 9×13 inch baking dish.
  2. Mix graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of your prepared baking dish to form a crust.
  4. Bake for 10 minutes, then let it cool slightly.
  5. Beat the softened cream cheese until smooth and creamy, about 2-3 minutes.
  6. Add the granulated sugar gradually, beating until fully combined.
  7. Add the sour cream, then the eggs one at a time, mixing well.
  8. Blend in the vanilla extract.
  9. Pour the cheesecake filling over the cooled crust.
  10. Bake for 35-40 minutes or until the edges are set with a jiggle in the center.
  11. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  12. Pipe whipped cream ghost shapes on the chilled cheesecake, using mini chocolate chips as eyes.

Notes

For a chocolate twist, use Oreo crumbs for the crust; for variations, add pumpkin or chocolate to the filling.
