Homemade Strawberry Ice Cream

A delightful recipe for homemade strawberry ice cream, capturing the essence of summer with every creamy scoop.

  • 1 1/2 cups strawberries, hulled and diced
  • 2 Tbsp honey
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup half and half
  • 1 tsp vanilla extract

Instructions

  1. Prepare the strawberries by washing them thoroughly, then hull and dice them into small pieces.
  2. Blend the diced strawberries, honey, 2 tablespoons of granulated sugar, and lemon juice until smooth.
  3. Mix together the heavy whipping cream, half and half, remaining sugar, and vanilla extract in a separate bowl.
  4. Combine the strawberry mixture with the cream mixture and fold gently to maintain the color.
  5. Chill the mixture in the fridge for 30-60 minutes.
  6. Churn the chilled mixture in your ice cream maker according to the manufacturer’s instructions for about 20-30 minutes.
  7. Fold in reserved diced strawberries if desired.
  8. Freeze the churned ice cream in an airtight container for a couple of hours or until it firms up.

Notes

For a dairy-free version, replace heavy cream and half-and-half with coconut cream and almond milk.
