Homemade Cinnamon Roll Cake

A warm, comforting cinnamon roll cake that combines the essence of a cinnamon roll in an easy-to-bake cake form, perfect for breakfast or dessert.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons milk (for icing)
  • 1 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking pan by greasing it lightly or lining it with parchment paper.
  3. Mix the dry ingredients: flour, granulated sugar, baking powder, and salt in a large bowl.
  4. Combine the wet ingredients: milk, melted butter, eggs, and vanilla in another bowl until smooth.
  5. Blend the wet ingredients into the dry mix until just combined.
  6. Prepare the cinnamon swirl by mixing ground cinnamon and brown sugar in a small bowl.
  7. Layer half of the batter into the pan, spread evenly, then sprinkle half of the cinnamon-sugar mixture over it.
  8. Pour the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture.
  9. Swirl gently with a knife or toothpick for a marbled effect.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Cool in the pan for 10-15 minutes on a wire rack.
  12. Make the icing by whisking powdered sugar, milk, and vanilla until smooth.
  13. Drizzle the icing over the cooled cake and serve.

Notes

Great served warm, optionally dust with powdered sugar or add whipped cream.
