  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup caramel bits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the flour and baking soda in a medium bowl. Add the pumpkin pie spice and set aside.
  3. Cream the brown sugar and pumpkin puree in a large bowl until smooth. Add in the egg and vanilla extract.
  4. Combine the dry mix into the wet mix, folding gently.
  5. Add in the chocolate chips and caramel bits, folding until incorporated.
  6. Scoop heaping spoonfuls of dough onto a lined baking sheet, leaving space between each.
  7. Bake for 12-15 minutes until edges are golden and centers are still soft.
  8. Cool on the tray for 5 minutes before transferring to a wire rack.
