Pumpkin Double Chocolate Chip Cookies

Deliciously soft and chewy cookies made with pumpkin puree and rich chocolate chips, perfect for fall or cozy gatherings.

  • 1 cup Pumpkin Puree
  • 1 ½ cups All-Purpose Flour
  • 1 cup Brown Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Baking Soda
  • ½ cup Cocoa Powder
  • 1 cup Semi-Sweet Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix your dry ingredients: whisk together the flour, cocoa powder, baking soda, and pumpkin pie spice.
  3. Cream the brown sugar and pumpkin puree until well blended.
  4. Add the egg and vanilla extract, mixing until well incorporated.
  5. Combine the wet and dry ingredients, stirring until just combined.
  6. Fold in the semi-sweet chocolate chips gently.
  7. Scoop heaping tablespoons of dough onto lined baking sheets.
  8. Bake for 10-12 minutes until the edges are set and the tops look slightly underbaked.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For added flavor, consider mixing in chopped nuts or drizzling caramel on top once cooled.
