Apple Crumble Cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/4 cup oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then add the milk and vanilla extract.
  4. Whisk together the flour, baking powder, and cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  6. Fold in the diced apples with a spatula.
  7. Grease a 9-inch round cake pan and pour the batter into it, smoothing the top with a spatula.
  8. Mix the oats, nuts, and a sprinkle of cinnamon with melted butter for the topping.
  9. Sprinkle the topping evenly over the batter.
  10. Bake for 45–50 minutes, or until a toothpick comes out clean.
  11. Remove from the oven and cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm with vanilla ice cream or whipped cream, and feel free to drizzle with caramel or sprinkle with powdered sugar.
