  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1 cup chopped vegetables (like carrots, zucchini, and bell peppers)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with a paper towel and season with olive oil, garlic powder, paprika, salt, and pepper.
  3. Sear the seasoned chicken in a large oven-safe skillet over medium-high heat for about 4-5 minutes on each side until golden brown.
  4. Remove the chicken and sauté chopped vegetables in the same skillet for about 3-4 minutes until softened.
  5. Pour in vegetable broth and return the chicken to the skillet, nestling it among the veggies.
  6. Bake for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let it rest for about 5 minutes before serving.
