One-Pan Beef Enchiladas

A flavorful and comforting one-pan beef enchiladas recipe that brings bold flavors and easy cleanup.

  • 1 lb lean ground beef
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cups enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Tortillas (corn or flour)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the chopped onion and diced bell pepper in olive oil for about 3-5 minutes until soft.
  3. Brown the ground beef alongside the veggies for about 5-7 minutes until browned.
  4. Mix in the black beans, corn, and 1 cup of enchilada sauce and let simmer for another 2-3 minutes.
  5. Prepare enchiladas by spooning 2-3 tablespoons of the beef mixture into each tortilla, rolling tightly, and placing seam-side down in the pan.
  6. Top with the remaining enchilada sauce and shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes or until bubbly and golden brown.
