Blueberry Cobbler

A delightful blueberry cobbler that’s simple to make and perfect for gatherings, filled with fragrant blueberries and a buttery crust.

  • 12 tablespoons unsalted butter, divided
  • 1 1/2 cups granulated sugar, divided plus 2 tablespoons for sprinkling on top
  • 2 teaspoons lemon zest
  • 3 cups blueberries
  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoons salt
  • 1 1/2 cups milk
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 8 tablespoons of the butter over low heat and let cool slightly.
  3. Mix 1 cup of the sugar and lemon zest in a bowl.
  4. Combine flour, baking powder, and salt in another bowl.
  5. Whisk together the milk and vanilla with the melted butter, then mix in the flour mixture until combined.
  6. Add the blueberries gently and fold them in.
  7. Pour the batter into a greased 9×13-inch baking dish.
  8. Sprinkle the top with 2 tablespoons of sugar.
  9. Bake for 45 to 50 minutes or until golden brown and a toothpick comes out clean.
  10. Cool for 10-15 minutes and serve warm.

Notes

Serve with vanilla ice cream or whipped cream for a delicious contrast.
