One-Pot Caribbean Chicken and Rice

  • 1 cup long-grain rice
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Prepare Your Ingredients: Gather all your ingredients before you start.
  2. Sauté the Aromatics: In a large pot, add olive oil and heat over medium. Toss in onion, garlic, and ginger. Sauté until the onion is translucent.
  3. Add Chicken: Add the diced chicken breast seasoned with salt, pepper, and paprika, cooking until no longer pink.
  4. Add Peppers and Rice: Stir in the red bell pepper and add the rice, ensuring it’s well mixed with the chicken and veggies.
  5. Pour in Coconut Milk and Broth: Add coconut milk and chicken broth, stir, and add thyme.
  6. Simmer: Bring to a boil, cover, and reduce heat to low. Let simmer for 20-25 minutes.
  7. Finishing Touches: Once cooked, fluff with a fork, serve topped with green onions.
