Autumn Chicken and Tortellini

A warm and comforting dish celebrating fall flavors with tender chicken, seasonal vegetables, and cheesy tortellini.

  • 1 package (9 oz) cheese tortellini
  • 2 cups assorted seasonal vegetables (squash, carrots, bell peppers)

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese for serving

Instructions

  1. Prepare your veggies: Preheat your oven to 400°F (200°C). Chop up your seasonal veggies into bite-sized pieces.
  2. Roast the vegetables: Spread your chopped veggies on a baking sheet, drizzle with olive oil, and sprinkle with salt, pepper, and Italian seasoning. Roast for 20-25 minutes until tender.
  3. Cook the tortellini: Bring a large pot of salted water to a boil and cook cheese tortellini according to package instructions.
  4. Mix the broth: In a large pot, pour in chicken broth and add garlic powder. Bring to a gentle simmer, then stir in shredded chicken.
  5. Combine it all: Add the roasted veggies and cooked tortellini to the broth, stirring gently.
  6. Final touches: Adjust seasoning with salt and pepper if needed.
  7. Serve and enjoy: Ladle into bowls and top with freshly grated Parmesan cheese.
