Creamy Parmesan Keto Chicken with Spinach and Mushrooms

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the chicken by patting it dry and seasoning both sides with salt and pepper.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Sear the chicken breasts for 6-7 minutes on each side until cooked through.
  4. Sauté the garlic and mushrooms in the same skillet for 4-5 minutes.
  5. Create the creamy sauce by adding heavy cream and stirring in Parmesan cheese.
  6. Add the spinach and return the chicken, allowing it to heat through.
  7. Taste and adjust seasoning if needed.
