Mediterranean Chicken Zucchini Bake

A comforting Mediterranean-inspired dish featuring juicy chicken, fresh zucchini and bell peppers, topped with creamy feta cheese.

  • 2 chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup feta cheese, crumbled
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Dice those chicken breasts into bite-sized pieces and season with salt and pepper.
  3. Heat about a tablespoon of olive oil in a large skillet over medium heat, then add the diced onions and sauté for 3-4 minutes.
  4. Add the garlic and cook for an additional minute.
  5. Next, add the sliced zucchini and chopped red bell pepper, sauté for 4-5 minutes.
  6. Stir in the diced chicken, oregano, basil, and diced tomatoes, cooking for 6-7 minutes.
  7. Transfer the mixture to a greased 9×13 inch baking dish.
  8. Crumble the feta cheese over the top and drizzle with olive oil.
  9. Bake for 25-30 minutes until the chicken is cooked through and the feta is golden.
  10. Let it cool for a few minutes before serving.

Notes

Feel free to substitute chicken with chickpeas for a vegetarian version or use other vegetables you have on hand.
