Moroccan Mediterranean Chicken Couscous Bowl

  • 2 cups couscous
  • 2 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the couscous: Start by bringing the chicken broth to a boil in a medium pot. Once it’s bubbling, reduce the heat to low, add the couscous, and cover it. Let it steam for about 5 minutes. After 5 minutes, fluff it with a fork and set it aside.
  2. Sauté the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken breast, seasoning it with salt, pepper, and half of the cumin and paprika. Cook for about 5–7 minutes, stirring frequently until the chicken is golden and cooked through.
  3. Add aromatics: Toss in the chopped onion, stirring to combine. Sauté for about 2–3 minutes until the onion becomes translucent. Now, add the minced garlic and stir for about 30 seconds.
  4. Mix in the veggies: Add the cherry tomatoes and red bell pepper to the skillet. Stir everything together and cook for another 3–4 minutes until the bell pepper softens.
  5. Spice it up: Add the remaining cumin and paprika and stir for about a minute.
  6. Combine couscous and chicken: Gently fold the cooked couscous into the chicken and vegetable mixture, ensuring everything is mixed thoroughly.
  7. Garnish and serve: Remove from heat, let it rest for a minute, and serve garnished with fresh parsley.

Notes

For a vegetarian option, substitute chicken with chickpeas. Serve with warm pita bread or a side of roasted veggies.
