Peach and Blueberry Cobbler

A warm and comforting cobbler featuring sweet peaches and blueberries, perfect for summer gatherings.

  • 4 cups fresh peaches, sliced
  • 2 cups fresh blueberries
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced peaches, blueberries, sugar, lemon juice, and vanilla extract. Toss gently until well-coated.
  3. Let this mixture sit for 10–15 minutes to release natural juices.
  4. In another bowl, whisk together the flour, baking powder, salt, and remaining sugar.
  5. Combine the milk and melted butter in a separate bowl, then gradually mix into the flour mixture until just combined.
  6. Grease a 9×13-inch baking dish and pour in the fruit mixture. Spoon the batter over the fruit.
  7. Bake for 40-45 minutes until golden brown and bubbly.
  8. Cool for 10 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Experiment with different berries or add nuts for texture.
