Pumpkin Mac Bowl

A cozy twist on classic mac and cheese featuring creamy pumpkin puree and cheddar cheese for an autumnal flavor.

  • 1 cup pumpkin puree
  • 2 cups shredded cheddar cheese
  • 1 cup milk (whole, almond, or oat)
  • 2 tablespoons butter (or olive oil)
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: In a large pot, bring salted water to a boil. Add macaroni and cook according to package instructions (7-8 minutes).
  2. Make the pumpkin sauce: In a separate saucepan, melt butter over medium heat.
  3. Stir in milk: Once melted, pour in milk and whisk until smooth.
  4. Add the pumpkin puree: Whisk until fully incorporated into the milk mixture.
  5. Season your sauce: Add salt, pepper, cinnamon, and nutmeg, cooking for 3-4 minutes.
  6. Add the cheese: Reduce heat and slowly mix in the shredded cheddar until melted.
  7. Combine pasta and sauce: Drain pasta and stir into the pumpkin cheese sauce until coated.
  8. Serve it up: Ladle into bowls and top with extra cheese or cracked pepper.

Notes

For a dairy-free version, use dairy-free cheese and almond or oat milk.
