Easy Spinach Rice Recipe (Spanakorizo)

A vibrant and comforting Mediterranean dish made with basmati rice and fresh spinach, perfect for a quick weeknight meal or as a stunning side dish.

  • 2 cups cooked basmati rice
  • 3 cups baby spinach
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons chicken bouillon powder
  • Salt and pepper, to taste
  • 1 teaspoon garlic granules
  • 2 teaspoons dried dill
  • Juice of ½ a lemon

Instructions

  1. Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and a pinch of salt. Sauté for about 3-5 minutes, or until the onions are translucent and slightly golden.
  2. Add garlic: Stir in the garlic granules (or fresh garlic if you’re using it). Let it cook for another minute, just until fragrant.
  3. Toss in the spinach: Add the baby spinach to the skillet. Stir and cook for about 3-4 minutes until wilted.
  4. Mix in the cooked rice: Lower the heat to medium-low, then gently fold in the cooked basmati rice, using a spatula to break up any clumps.
  5. Season the rice: Sprinkle in the chicken bouillon powder, salt, pepper, garlic, and dill. Stir everything together until well combined.
  6. Finish with lemon: Remove the skillet from the heat and drizzle the lemon juice over the rice. Give it a final gentle fold.

Notes
