Turkey Vegetable Soup

A heartwarming turkey vegetable soup that’s nourishing, flavorful, and perfect for chilly evenings.

  • 1 pound Ground Turkey
  • 4 cups Mixed Vegetables (carrots, celery, onions)
  • 6 cups Broth (chicken or vegetable)
  • Dried thyme, parsley, and bay leaves
  • Salt and Pepper to taste
  • 1 tablespoon Olive Oil

Instructions

  1. Sauté the Aromatics: Heat a large pot over medium heat, add olive oil, and sauté chopped onions, carrots, and celery for 5-7 minutes.
  2. Brown the Turkey: Push vegetables aside, add ground turkey, and cook for 5-7 minutes until no longer pink.
  3. Add the Broth and Herbs: Pour in broth, stir in herbs, and bring to a gentle boil; simmer for 30 minutes.
  4. Introduce the Mixed Vegetables: Add mixed vegetables and simmer for another 10-15 minutes until tender.
  5. Season and Serve: Adjust seasoning, add lemon juice if desired, and ladle soup into bowls.

Notes
