  • 2 cans (15 oz each) white beans (cannellini or great northern, drained and rinsed)
  • 1 can (4 oz) diced green chiles
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 cups low-sodium chicken broth (or vegetable broth for vegetarian option)
  • 1/2 cup heavy cream or sour cream (or Greek yogurt)
  • Fresh cilantro, shredded cheese, avocado slices, or crushed tortilla chips (for topping)

Instructions

  1. Prepare the chicken by dicing it into bite-sized pieces.
  2. Sauté the diced onion and minced garlic in olive oil until soft.
  3. Cook the chicken in the pot until browned.
  4. Spice it up by adding cumin, oregano, and smoked paprika.
  5. Add the white beans, green chiles, and chicken broth, then bring to a boil and simmer.
  6. Finish with cream or sour cream, then season to taste.
  7. Let it rest for a few minutes to meld the flavors.
