Beef & Butternut Squash Chili

A hearty and comforting chili made with ground beef and sweet butternut squash, perfect for chilly evenings.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium butternut squash (peeled and diced)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups chicken or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper (to taste)
  • Olive oil (for sautéing)

Instructions

  1. Prep your ingredients: Start by peeling and dicing the butternut squash, dicing the onion, and mincing the garlic. Having everything ready will make the cooking process smooth and enjoyable.
  2. Sauté the aromatics: In a large pot, heat about 2 tablespoons of olive oil over medium heat. Add the diced onion and a pinch of salt. Sauté until the onion is translucent, about 5 minutes.
  3. Add the garlic: Toss in the minced garlic and cook for another minute, stirring frequently.
  4. Brown the beef: Push the onions and garlic to the side of the pot, then add the ground beef. Cook until it’s no longer pink, about 5-7 minutes.
  5. Introduce the spices: Stir in the chili powder and cumin, ensuring the meat is well-coated.
  6. Add the squash and beans: Carefully fold in the diced butternut squash and rinsed black beans.
  7. Pour in the tomatoes and broth: Add the diced tomatoes (with juices) and about 2 cups of broth.
  8. Simmer it down: Increase the heat until the mixture reaches a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered for 30-40 minutes.
  9. Final seasoning: Once the butternut squash is tender and the chili has thickened, taste and adjust seasoning with salt and pepper.

Notes

Serve hot with crusty bread or cornbread. For added flavor, top with shredded cheese or a dollop of sour cream.
