Heartwarming Beef Vegetable Soup

  • 1 pound Beef (chuck roast or stew meat)
  • 2 medium Potatoes (diced)
  • 2 large Carrots (sliced)
  • 1 cup Frozen Peas
  • 1 can Canned Tomatoes (diced or crushed)

Instructions

  1. Brown the beef by heating olive oil in a large pot over medium heat. Sear until deeply browned on all sides, about 5-7 minutes.
  2. Add a chopped onion and 2 minced garlic cloves. Sauté for 3-4 minutes until fragrant.
  3. Incorporate the diced potatoes, sliced carrots, and peas. Mix and let the veggies soak in the flavors for about 2-3 minutes.
  4. Pour in the can of diced tomatoes (juice and all), and fill the can with water and add to the pot. Stir to combine.
  5. Simmer by bringing to a gentle boil, then reduce heat to low and cover. Let simmer for about 45 minutes, stirring occasionally.
  6. Final touches include tasting and adjusting seasoning as needed during the last 10 minutes of cooking.
  7. Serve hot, ideally with crusty bread, and a sprinkle of fresh parsley on top for added freshness.

Notes

For variations, try adding green chilies for a spicy kick or fresh herbs for added depth. This soup can be made ahead and freezes well.
