  • 1 lb skinless chicken breasts or thighs
  • 8 oz traditional egg noodles
  • 2 cups fresh carrots, chopped
  • 2 cups celery, chopped
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1/4 cup fresh parsley, chopped
  • 6 cups chicken broth
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by chopping the onions, carrots, and celery. Mince the garlic finely.
  2. Sauté the aromatics in a large pot with olive oil over medium heat until the onions are translucent.
  3. Add the chicken pieces and pour in the broth. Bring it to a gentle boil.
  4. Toss in the carrots and celery, reduce heat, and let it simmer for 20-30 minutes until the chicken is cooked through.
  5. Shred the cooked chicken and return it to the pot.
  6. Cook the noodles according to package instructions, usually about 6-8 minutes.
  7. Season the soup with salt, pepper, and fresh herbs.
  8. Let it simmer on low heat for a few more minutes.
