Homemade Chicken Rice Soup

A comforting chicken rice soup that brings warmth and flavor to your table, perfect for chilly days.

Ingredients

  • 1 pound boneless, skinless chicken breast or thighs
  • 1 cup long-grain white rice
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced (optional)
  • 2 cloves garlic, minced (optional)
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt & pepper, to taste

Instructions

  1. Prepare your ingredients: Wash and chop your vegetables.
  2. Sauté your base: Heat olive oil over medium heat and add onions, carrots, and celery.
  3. Add garlic and chicken: Toss in the minced garlic and chicken, cooking until fragrant.
  4. Pour in the broth: Add chicken broth and scrape up bits from the pot.
  5. Incorporate the rice: Stir in rice and reduce heat to simmer for 15–20 minutes.
  6. Season and taste: Add herbs and season with salt and pepper.
  7. Finish up: Remove chicken, shred it, and return it to the pot.

Notes

Serve with crusty bread or a simple side salad. A squeeze of lemon enhances the flavors!
