Chicken Rice Soup

A comforting bowl of Chicken Rice Soup filled with succulent chicken, tender rice, and a medley of vegetables.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup cooked chicken, shredded
  • 1 cup rice (white or brown)
  • 6 cups chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the vegetables: Heat the olive oil and add the chopped onion. Sauté for about 3–4 minutes until translucent, then add the garlic, carrots, and celery. Cook for an additional 5 minutes until softened.
  2. Add the broth and rice: Pour in the chicken broth and stir, scraping any flavorful bits. Bring to a gentle boil, then add the rice.
  3. Incorporate the chicken: After the rice has been cooking for 10 minutes, add the shredded chicken. Stir to combine and season with salt and pepper. Allow to simmer on low for another 10 minutes.
  4. Check the rice for doneness: Remove from heat when al dente. Adjust seasoning as needed. Stir in cream or coconut milk for a creamier texture if desired.
  5. Serve the soup: Ladle into bowls, ensuring an even mix of chicken, rice, and vegetables. Garnish with fresh parsley.
