Cozy Autumn Wild Rice Soup

A warm and hearty wild rice soup filled with vibrant veggies and aromatic herbs, perfect for the chilly autumn season.

  • 1 cup wild rice
  • 4 cups chicken or vegetable broth
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, chopped
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Chop your carrots, celery, onion, and mushrooms into bite-sized pieces. Mince the garlic and rinse the wild rice under cold water.
  2. Sauté the veggies: In a large pot, heat olive oil over medium heat. Add the onion first, cooking until translucent (about 5 minutes), then add carrots and celery.
  3. Add the garlic and mushrooms and cook for another 5 minutes until the mushrooms are tender.
  4. Incorporate the wild rice and let it toast for a minute, then pour in the broth and bring to a boil, lowering heat to simmer.
  5. Time for the herbs: Stir in thyme and rosemary, cover, and simmer for about 45 minutes until the rice is tender.
  6. Finish it off by stirring in heavy cream, warming for an additional 5-10 minutes, and adjusting seasoning.
  7. Serve in bowls with garnishes like fresh thyme or grated Parmesan and enjoy!

Notes

Can substitute wild rice with long-grain brown rice. Freeze leftovers for future meals and serve with crusty bread.
