Broccoli Cheddar Soup

A heartwarming and creamy Broccoli Cheddar Soup that combines health and comfort in a bowl, perfect for chilly days and easy cooking.

Ingredients

Scale
  • 4 cups fresh broccoli florets
  • 2 cups shredded aged cheddar cheese
  • 2 medium carrots, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. Prepare the ingredients by washing and chopping your broccoli into bite-sized florets. Set these aside. Peel and dice the carrots, and finely chop the onion and garlic.
  2. Sauté the aromatics in a large pot over medium heat with olive oil or butter until the onion is translucent, about 5 minutes. Add the garlic and sauté for an additional minute.
  3. Cook the carrots by adding them to the pot and stirring. Sauté for another 5 minutes until they begin to soften.
  4. Add the broccoli florets and vegetable broth, bringing it to a gentle boil before reducing the heat to simmer for about 15 minutes.
  5. Blend until smooth using an immersion blender, adjusting for desired consistency.
  6. Stir in the heavy cream and cheddar cheese until melted and well combined. Season with salt and pepper.
  7. Serve warm, ladling into bowls and adding optional toppings like extra cheddar or croutons.

Notes

Adjust the cheese measurement to your liking, and for a kick, add some chili flakes while cooking.
