Chicken Wild Rice Soup

A comforting classic soup that’s hearty and perfect for cozy nights, featuring chicken, wild rice, and creamy goodness.

  • 1 lb Chicken, diced
  • 1 cup Wild Rice
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 1 cup Cream
  • 4 cups Chicken Broth
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 1 tsp Thyme
  • 1 Bay Leaf
  • Salt and Pepper to taste

Instructions

  1. Prep the ingredients by dicing chicken, carrots, celery, and onion, and mincing garlic.
  2. Sauté the onions, garlic, and celery in olive oil until translucent (3-5 minutes).
  3. Cook the diced chicken until no longer pink (5-7 minutes).
  4. Add carrots and wild rice, stirring for a couple of minutes to combine.
  5. Pour in the chicken broth, bring to a boil, then reduce to a simmer with thyme and bay leaf for 45 minutes.
  6. Finish by stirring in the cream, season with salt and pepper, and let simmer until heated through.
  7. Taste and adjust seasoning as needed.

Notes

Add greens like spinach or kale for a nutritious twist. This soup can be stored in the fridge for 3-4 days or frozen for up to 3 months.
