Creamy Tomato Tortellini Soup

A warm and comforting creamy tomato soup filled with cheesy tortellini and fresh basil, perfect for cozy evenings.

Ingredients

  • Tortellini (1 package)
  • Canned Diced Tomatoes (28 oz)
  • Heavy Cream (1 cup)
  • Fresh Basil (1 cup, chopped)
  • Garlic (4 cloves, minced)
  • Onion (1 medium, diced)
  • Olive Oil (2 tablespoons)
  • Salt & Pepper (to taste)

Instructions

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until they’re translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.
  2. Add the Tomatoes: Add your canned diced tomatoes (juice and all) and allow the mixture to come to a gentle simmer, bubbling for about 5-7 minutes.
  3. Blend for Creaminess: Optionally, blend the mixture until creamy with an immersion blender or transfer half to a blender, blend, and return it to the pot.
  4. Bring on the Cream: Pour in the heavy cream, stir to combine, and simmer for another 5 minutes to meld the flavors.
  5. Cook the Tortellini: Add the tortellini according to the package instructions, usually around 3-5 minutes.
  6. Finish with Basil: Fold in the fresh basil, stir well, and let sit for a minute to allow the flavors to marry.
  7. Serve and Enjoy: Ladle the soup into bowls, adding a drizzle of olive oil and some additional basil on top if desired.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of water or broth.
