Creamy Tomato Tortellini Soup

  • 1 minced Onion
  • 2 minced Garlic cloves
  • 28 ounces Crushed Tomatoes
  • 4 cups Vegetable Broth
  • 1 cup Heavy Cream
  • 9 ounces Cheese Tortellini
  • Fresh Basil leaves
  • Salt to taste
  • Black Pepper to taste
  • Red Pepper Flakes (optional)

Instructions

  1. Sauté the Aromatics: In a large pot over medium heat, drizzle in a tablespoon of olive oil. Toss in a minced onion and sauté until soft and translucent—about 3-5 minutes. Add in minced garlic and cook for another minute until fragrant.
  2. Add the Tomatoes: Pour in a 28-ounce can of crushed tomatoes. Stir well, and let it bubble away for amazing aromas.
  3. Pour in the Broth: Add four cups of vegetable broth to the pot. Stir, bring to a gentle boil, cover, and simmer for about 15 minutes.
  4. Cream it Up: Add in a full cup of heavy cream and stir until creamy and well-combined.
  5. Cook the Tortellini: Add cheese tortellini and let them cook until they float to the top, usually about 5-7 minutes for fresh tortellini.
  6. Basil Time: Tear up fresh basil leaves and stir them into the soup.
  7. Season to Taste: Adjust seasoning with salt, black pepper, and optional red pepper flakes.
  8. Serve and Enjoy: Ladle the soup into bowls and enjoy your cozy dish!
