Garlic Parmesan Crockpot Chicken and Potatoes

A simple and flavorful dish that combines tender chicken and baby potatoes cooked in a garlic Parmesan sauce using a crockpot.

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients by washing baby potatoes and chopping larger ones in half. Mince garlic and season chicken breasts.
  2. Sear the chicken (optional) in olive oil until browned, then transfer to the crockpot.
  3. Layer the halved potatoes around the chicken in the crockpot.
  4. Add the minced garlic over the chicken and potatoes and pour the chicken broth over them.
  5. Season with remaining Italian seasoning, red pepper flakes, and Parmesan cheese.
  6. Set the crockpot to cook on low for 6-8 hours or high for 3-4 hours.
  7. Finishing touches: After cooking, let it sit uncovered to develop a bit of crust.
  8. Garnish with chopped fresh parsley before serving.
