One Pot Gnocchi Chicken Pot Pie

A cozy and comforting one-pot dish combining gnocchi and a creamy chicken filling, perfect for weeknight dinners.

  • 4 Tablespoons butter or vegan butter
  • 1 cup sliced carrots
  • 4 oz mushrooms (sliced)
  • 1 large or 2 small ribs celery (thinly sliced)
  • 1 large shallot or small onion (chopped)
  • Homemade seasoned salt and pepper
  • 2 cloves garlic (pressed or minced)
  • 1 teaspoon poultry seasoning
  • Pinch dried thyme
  • 3 Tablespoons gluten-free flour (or all-purpose flour)
  • 2 cups chicken stock or broth
  • 1 cup milk (any kind; unsweetened almond milk recommended)
  • 12 oz package gluten-free gnocchi
  • 11/2 cups shredded chicken breast (~1/2 lb pre-cooked)
  • 1/2 cup frozen peas

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Toss in the sliced carrots, mushrooms, celery, and shallots; sauté for about 5–7 minutes until softened.
  3. Stir in the garlic, poultry seasoning, and thyme; let them mingle for about 1 minute.
  4. Sprinkle the flour over the veggies and mix it well; cook for another minute.
  5. Gradually add the chicken stock and milk, whisking gently to avoid lumps.
  6. Add the gnocchi when the sauce reaches a gentle simmer, let bubble for 3-4 minutes.
  7. Once the gnocchi is cooked, add the shredded chicken and frozen peas; stir and heat through for 2–3 more minutes.
  8. Give it a taste and adjust seasoning if needed.
  9. Serve hot in bowls, optionally topped with fresh herbs.

Notes

Serve with a sprinkle of fresh herbs and a lemony arugula salad or crusty bread on the side.
