Pumpkin Chicken Soup

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup canned pumpkin puree
  • 1 medium yellow onion, chopped
  • 3 cloves of garlic, minced
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 tablespoon fresh sage leaves, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat and add chopped onion. Sauté for 5-7 minutes until translucent.
  2. Add the garlic: Toss in minced garlic and sauté for an additional minute until fragrant.
  3. Cook the chicken: Add chicken to the pot, season with salt and pepper, and cook for 6-8 minutes until browned.
  4. Stir in the pumpkin: Pour in the pumpkin puree, stirring to combine well.
  5. Add liquid: Pour in chicken broth, bring to a gentle boil, then reduce to a simmer for 15-20 minutes.
  6. Blend it up: Use an immersion blender to purée the soup to your desired consistency.
  7. Finish with cream: Stir in cream and fresh sage, allow to heat for another 5 minutes.
  8. Serve it up: Turn off the heat and serve the soup garnished with chopped sage and a drizzle of cream.
