  • 1 lb Ground Beef
  • 2 Bell Peppers (green, red, yellow, diced)
  • 1 cup Rice (brown or white)
  • 1 can Diced Tomatoes
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • 4 cups Beef Broth
  • 1 tsp Oregano
  • 1 tsp Basil
  • Salt and Pepper to taste

Instructions

  1. Prep your ingredients: Wash and dice peppers, chop onion, and mince garlic.
  2. brown the ground beef in a large pot over medium heat with olive oil for 5-7 minutes.
  3. Add chopped onions and minced garlic to the pot, cooking until the onions are translucent for about 3-4 minutes.
  4. Stir in the diced peppers and cook until they begin to soften, about 5 minutes.
  5. Introduce the diced tomatoes and beef broth to the mix. Bring to a gentle boil.
  6. Add the rice and reduce the heat to low. Cover and let simmer for about 25 minutes.
  7. Season to taste before serving, adjusting salt and herbs as desired.
  8. Serve in bowls, garnished with fresh herbs or cheese if desired.
