Oven-Roasted Caramelized Radishes

A simple yet delicious side dish that transforms radishes into sweet and tender bites through roasting.

  • 1 pound radishes, trimmed and halved
  • 2 tablespoons butter (or olive oil for a dairy-free option)
  • Salt, to taste
  • Flaky sea salt, for finishing
  • Optional: Fresh herbs (like thyme or parsley), chopped
  • Optional: Zest of 1 lemon

Instructions

  1. Preheat the oven: Begin by setting your oven to 425°F (220°C).
  2. Prep the radishes: Rinse and trim your radishes, removing any blemishes or greens. Halve them for even roasting.
  3. Toss with butter and salt: In a mixing bowl, melt the 2 tablespoons of butter (or olive oil) and add a generous pinch of salt. Toss the radish halves in this butter mixture until they’re well-coated.
  4. Arrange on a baking sheet: Spread your seasoned radishes out on a baking sheet in a single layer.
  5. Roast away: Pop them in the oven and roast for 25-30 minutes, stirring halfway through.
  6. Finish with flair: Once they’re beautifully roasted, sprinkle some flaky sea salt and the zest of one lemon over the top, if using.
  7. Garnish: Optionally, add some freshly chopped herbs before serving.
