Peach Crumb Bars

Delicious Peach Crumb Bars that celebrate summer with a crumbly, buttery crust and luscious peach filling.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 170 g unsalted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups diced peaches (fresh or frozen)
  • 2 tbsp cornstarch
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, granulated sugar, brown sugar, baking powder, and salt in a large bowl.
  3. Add the cold, unsalted butter and mix until it resembles coarse crumbs.
  4. Incorporate the beaten egg and vanilla extract into the crumb mixture until it just comes together.
  5. Press about two-thirds of the mixture firmly into the bottom of a greased 9×9-inch pan.
  6. Mix the diced peaches, cornstarch, 1/4 cup sugar, lemon juice, and cinnamon in a medium bowl.
  7. Layer the peach mixture over the pressed crumb crust.
  8. Sprinkle the remaining crumb mixture over the top of the peach filling.
  9. Bake for about 45-50 minutes or until golden brown.
  10. Cool for at least 30 minutes before slicing.

Notes

Serve with vanilla ice cream or whipped cream for an extra indulgent treat.
