Peach Upside Down Cake

A delightful peach upside down cake that brings back nostalgic summer memories, topped with caramelized peaches and a fluffy cake base.

  • 4 ripe peaches, sliced
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the round cake pan with melted butter and brown sugar. Arrange sliced peaches in a circular pattern.
  3. Mix the granulated sugar and remaining butter until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Combine flour, baking powder, and salt in another bowl, then add to the wet mixture, alternating with milk.
  6. Pour the batter over the arranged peaches and bake for about 35-40 minutes until a toothpick comes out clean.
  7. Cool the cake in the pan for 10 minutes, then flip onto a serving platter.

Notes

Serve warm, optionally topped with whipped cream or vanilla ice cream. Pairs well with coffee or iced tea.
