Quick and Flavor-Packed Peanut Chicken Wraps

Delicious and easy Peanut Chicken Wraps filled with chicken, crunchy veggies, and silky peanut sauce, perfect for busy weeknights.

  • 3 cups coleslaw mix
  • 1 cup shredded carrots
  • 1/3 cup roasted peanuts
  • 1/4 cup chopped fresh cilantro
  • 2 cooked chicken breasts – chopped or sliced
  • 6 large tortillas
  • 1/4 cup honey
  • 1/4 cup olive oil (or vegetable oil)
  • 1/4 cup peanut butter
  • 3 tablespoons unseasoned rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/41/2 teaspoon crushed red pepper flakes
  • 1 tablespoon grated fresh ginger
  • 1 large garlic clove – minced

Instructions

  1. Prepare Your Chicken: Cook chicken breasts by grilling, baking, or sautéing, then chop into bite-sized pieces.
  2. Mix Your Veggies: Combine coleslaw mix and shredded carrots in a large bowl.
  3. Make the Peanut Sauce: Whisk together honey, olive oil, peanut butter, rice vinegar, soy sauce, sesame oil, pepper, salt, crushed red pepper, ginger, and garlic.
  4. Combine: Fold chicken and half of the peanut sauce into veggie mix.
  5. Assemble the Wraps: Lay tortillas flat, then spoon chicken and veggie mixture onto each tortilla.
  6. Wrap It Up: Fold in sides and roll tightly from bottom to top.
  7. Slice & Serve: Cut each wrap in half diagonally and serve with extra sauce if desired.

Notes
