Pizza Soup

A cozy bowl of deliciousness, combining all the classic flavors of pizza in a comforting soup.

  • 1 pound Italian sausage
  • 1 cup pepperoni, sliced
  • 1 can (15 oz) diced tomatoes
  • 1 cup mozzarella cheese, shredded
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 4 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. Cook the sausage in a large pot over medium heat with olive oil for 5-7 minutes, until browned and crispy.
  2. Add the chopped onion and bell peppers; sauté for 3-4 minutes until softened.
  3. Pour in the diced tomatoes and chicken broth, adding wine if using, and cook for 1 minute.
  4. Season with Italian seasoning, salt, pepper, and red pepper flakes.
  5. Simmer for 15-20 minutes, allowing flavors to meld.
  6. Add pepperoni slices and simmer for another 5 minutes.
  7. Stir in mozzarella, allowing it to melt into the soup.
  8. Taste and adjust seasoning as needed.
  9. Serve hot with fresh herbs and crusty bread on the side.

Notes

For a vegetarian option, omit sausage and pepperoni and add more vegetables. This soup can be made ahead and even frozen for later enjoyment.
