Preserving Bourbon Figs

  • 11 pounds Fresh Figs, halved (for 9 pints) or 16 pounds (for 7 quarts)
  • 12 cups Water
  • 8 cups Sugar
  • 1 tablespoon Bottled Lemon Juice
  • Bourbon (to taste)

Instructions

  1. Prep your jars: Start by sterilizing your canning jars to ensure no pesky bacteria spoil your delicious figs.
  2. Halve those figs: Rinse your fresh figs under cool water and gently pat them dry.
  3. Make the syrup: In a large saucepan, combine the water and sugar over medium heat.
  4. Infuse with bourbon: Once your syrup is simmering, remove it from the heat and pour in the bourbon.
  5. Combine figs and syrup: Gently toss your halved figs into the syrup.
  6. Fill the jars: Carefully ladle the syrupy figs into your prepared jars.
  7. Seal and process: Wipe the rims of the jars and place the lids on securely.
  8. Cool down: Remove the jars from the water bath and let them cool completely.
  9. Store and enjoy: Once cooled, store your Bourbon Figs in a dark, cool place.

Notes

Let the figs sit for at least a week before enjoying to allow the flavors to develop. These figs can last for about a year when sealed properly.
