Pumpkin Brownie Bites

Delightful mini brownies combining pumpkin and chocolate flavors, perfect for autumn gatherings.

  • 1 cup pumpkin puree
  • 1/2 cup unsweetened cocoa powder
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a mini muffin pan with liners.
  2. Mix the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and creamy.
  3. Sift together the cocoa powder, baking powder, and salt in a separate bowl. Gradually add this to the wet ingredients, stirring until just combined.
  4. Fold in the chocolate chips evenly throughout the batter.
  5. Fill each muffin compartment about 2/3 of the way full with batter.
  6. Bake for about 18–20 minutes, or until a toothpick comes out with moist crumbs.
  7. Cool in the pan for about 5 minutes before transferring to a wire rack.

Notes

For added elegance, dust with powdered sugar or serve with a scoop of ice cream.
