Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together pumpkin puree, brown sugar, and vanilla extract until smooth.
  3. Add the egg and whisk until fully incorporated.
  4. Combine flour, baking soda, and pumpkin pie spice in a separate bowl.
  5. Mix the dry ingredients into the wet mixture gradually.
  6. Stir in chocolate chips and espresso powder until evenly distributed.
  7. Scoop dough onto a lined baking sheet, leaving space for spreading.
  8. Bake for 12-15 minutes until edges are golden brown.
